WHere is a home-style version of a cocktail found on our latest drinks list. This is a batch pre-mixed which is bursting full of tastes of the festive period, making it perfect for your celebration. Save the extra citrus syrup you can use for morning drinks, puddings, or to mix another batch of bikinis.
Bikini
Makes enough for 10 people
Ingredients for the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Premix (produces 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
For the Syrup: Combine all the items into a pot, bring to a light boil, stirring to dissolve. After that, remove from the heat and leave to reach room temperature fully. Transfer into an sterilised bottle, close it keeping it in the refrigerator, where it will keep for up to four weeks.
Preparing the Batch Mix: Combine all the liquid ingredients into one sizeable container, allow it to infuse for an hour, then filter it best through muslin, to ensure it's fully clarified.
For serving: Measure 85ml of the premix into a cocktail shaker packed with ice, gently stirring carefully for about 60 seconds to chill. Pour to a chilled martini glass or similar, decorate with a few cranberries and complete it by giving it a brief mist of the essential oil over the drink.
